Thank You and a Recipe

Is was a GREAT day !  The 4 Friends Sale was so
much fun and we got to visit with many,
many of our friends and followers throughout the day.

I would like to thank everyone who came
and shopped my little "boutique".

All your sweet comments keep me
motivated to keep creating
and searching for all those
fun items you like.

So along with my hubby,
I would like to THANK YOU
 for another great sale!

ALSO - as promised - the recipe
for the Cheddar-Beer Bread
is below! See you again soon! M.

Cheddar Beer Bread

1 tablespoon olive oil
1/2 cup finely chopped yellow onion
1/4 teaspoon ground black pepper
1 garlic clove, minced

3 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt

1 cup grated cheddar cheese
1, 12-ounce bottle lager-style beer ( I used a popular, lite, "banquet" beer brewed in Colorado)

cooking spray
2 tablespoons melted butter (divided)

Preheat oven to 375 degrees.  Spray 9 x 5 inch loaf pan with cooking spray.  Set aside.

Heat oil in small skillet over med-lo heat.  Add onion and cook 10 minutes or until browned.  Stir in pepper and garlic and cook 1 minute.  ***NOTE:  I didn't add any garlic to the bread I served Saturday.

Whisk the flour, sugar, baking powder, and salt in large bowl.  Make a "well" in the center and add the onion mixture, cheese and beer - stirring until just moist.

Spoon batter into the loaf pan.  Drizzle 1 tablespoon of the melted butter over the top of the batter.  Place in oven and bake for 35 minutes.  Drizzle the remaining tablespoon of melted butter over the batter and bake for an additional 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Cool in pan for 5 minutes on a wire rack; remove from pan.  Cool completely on rack.

I was short on time and didn't want to mince and cook fresh onion, so I placed some dehydrated onion flakes in a small dish and covered with warm water.  Let it stand to soak up the water, squeezed excess water out, then added it to the dry ingredients with the cheese and beer.

PS  HAPPY ST. PATRICK'S DAY !!!
